High River Angus
Sometimes called Culotte, or Top Sirloin Cap, the Picanha is a very popular cut of beef, especially in Latin cultures. This cut is ideal for the grill and provides a tender, juicy, beefy eating experience.
Beef short ribs are a cut of beef taken from the chuck, plate, or rib area of the cow. They are characterized by short pieces of rib bone surrounded by meat. Short ribs are known for their rich, beefy flavor and are often cooked low and slow, like braising, to tenderize the connective tissue.
While they can be grilled, the Chuck cuts do best when cooked low and slow in a moist heat. Great for pot roast and slow-cooker recipes, the Chuck offers up a rich beefy flavor in a value priced package.
Beef short tri-tip, often called just tri-tip, is a triangular cut of beef from the bottom sirloin. It's known for its rich, beefy flavor and relatively lean, tender texture. Tri-tip is popular for grilling, roasting, and smoking, and is especially associated with Santa Maria-style barbecue.
A classic cut, the Brisket requires low, slow, and moist cooking before its maximum tenderness is achieved. Great for the smoker, this cut is also the foundation for corned beef. Don't want to smoke it yourself, give us a call, we can smoke it for you for an additional fee.
